  1. Preheat oven to 450°F.
  2. Heat a non-stick pan on high heat until almost smoking.
  3. Season the Sea Bass with salt and pepper.
  4. Add the olive oil to the pan and add the fish.
  5. Sear for 15 seconds, flip and place in the oven.
  6. Flip the fish every 2 minutes until desired doneness then remove from oven.
  7. Remove the fish onto a plate, and add the parsley, shallot, ginger, garlic, mushrooms and butter.
  8. Saute until the shallots have become translucent and
  9. deglaze with the wine.
  10. Add the lobster broth and cream and reduce until nape
  11. consistency.
  12. Pour sauce over the fish and serve.
