  1. 1. Bring large pot of water to a boil.
  2. 2. Meanwhile,m put the olive oil in a large saucepan over medium-high heat. When it's hot, add the onion & garlic and season with salt & pepper.
  3. 3. Cook, stirring occasionally, until the onion is soft, about 10 minutes.
  4. 4. Add the crushed red pepper & tomatoes, adjust the heat so the mixture simmers steadily, and cook, stirring occasionally for 10 minutes.
  5. 5. When the water comes to a boil, salt it generously and add the pasta.
  6. 6. Add the vodka to the tomato mixture, and continue cooking until thick & saucy, another 10-15 minutes.
  7. 7. Stir the cream & butter into the tomato sauce, and turn off the heat.
  8. 8. When the pasta is al dente- usually after 10-15 minutes, depending on the package instructions. Drain the pasta.
  9. 9. Toss the pasta with the sauce.
  10. 10. Add the Parmesan, toss again & serve hot.
  11. 11. Garnish with more Parmesan.
