  1. 1. Preheat the oven to 400F/200 C. Line a 12-hole muffin or cupcake pan.
  2. 2. Sift together flour, baking soda, and salt. Add sugar, coconut, and chopped cherries.
  3. 3. In a separate bowl, beat eggs, then add coconut milk, oil, and vanilla, Make a well in the center of the dry ingredients and pour in the liquid ingredients. Mix well, then spoon into muffin pan.
  4. 4. Bake for 6-7 minutes, then top each muffin with a hole cherry. Bake for an additional 13-14 minutes.
