"Refreshing, healthy, and energizing drink containing coconut water for electrolytes and mint for a cool taste. Chia seeds are high in omega-3 fatty acids and antioxidants. Inspired by Mexican Chia Fresca and my love for mojitos!"
Add the mint leaves, strawberries, and 1 cup of water to a blender and blend for at least 20-30 seconds until smooth.
Strain into a pitcher at least 2 qts in size. Add the coconut water, plus 1 cup regular water. Then add the limes and lemons, stir, and taste.
Add the sweetener and adjust to desired taste.
Once the desired taste is achieved, add the chia seeds in small increments while stirring. As soon as the chia seeds begin to absorb water, they will stick to anything, even themselves. So it's important to keep stirring about 1-2 minutes to prevent forming clumps.
Place in the refrigerator about 30 minutes to allow the chia seeds to fully absorb the liquid. Or, let it sit in the refrigerator overnight to enjoy the full flavor of the mint.
