  1. Cut up onion into large chunks and place into bottom of slow cooker. Rub roast with Montreal and Adobe seasonings. Place, fat side up, into the slow cooker. Place garlic into the meat folds. Drizzle roast with Dales and pour any remaining sauce directly into the slow cooker. Cook on low for 5 hours. Add carrots and potatoes and cook one more hour.
