  1. Stir shredded chicken and cooking sauce in a sauce pan until heated through.
  2. Meanwhile, heat up a skillet over medium-low heat.
  3. Layer half a tortilla with 2 tablespoons shredded cheese, 1/4 chicken mixture, 2 tablespoons shredded cheese and fold tortilla. Prepare the remaining three tortillas.
  4. Spray skillet with cooking spray and cook quesadilla about 2 minutes, until golden brown, then flip the quesadilla over. Cook another 2 minutes until golden brown and cheese has melted.
  5. Repeat with remaining quesadillas.
  6. Serve with sour cream, salsa, and/or guacamole.
