Place the pork a reclosable plastic bag or container. Pour in 12oz of desired cola drink and 1/2 c brown sugar. Marinade overnight.
Drain marinade and place pork in a slow cooker with 6oz of cola drink, water and garlic salt. Cook on high for 4 hours.
Remove pork from crock pot, drain off liquid, shred pork. In a separate bowl, mix together 6oz of cola drink, can of chiles, enchilada sauce, Herdez cooking sauce, and brown sugar. Place shredded pork back in the crock pot, cover with sauce, and heat on low for 2hours.
To make the salad, layer as follows: black beans, white rice, chopped lettuce, and pulled pork. Top with pico de gallo, guacamole, shredded cheese and tortilla strips.
Serve with your choice of dressing, but as for me, I'd use a tangy creamy tomatillo dressing.
