"After reading about 20 other recipes for Tortilla soup on here, I played around with the basics of the best ones and came up with this hybrid recipe. Extremely easy and I had everything I needed on hand already. Tasted so great I can't wait to make it again."

  1. Dice 1 small onion and 1 small sweet yellow bell pepper.
  2. Put 2 tbs of butter in a large pot and begin to melt on medium heat. Then sauté the diced onion and pepper until onion turns clear.
  3. Add 2 Cups of chicken broth and simmer for about 5 minutes
  4. Add 1 tbs of Cumin, 1tsp of salt, 1 tsp of garlic powder, 2 cups of pre-cooked shredded chicken to the pot. Let simmer another 5 minutes.
  5. Add 2 cups of your favorite red salsa (tomato based kind.) Then add 1 whole can of corn, water and everything to the pot.
  6. Heat for another 10 minutes, then serve warm with sour cream, avocado slices, and shredded cheese.
