  1. In a large bowl, microwave the frozen hash browns until thawed. I usually just use a little more than ½ of the bag. ¾ if you like a lot. Stir in the melted margarine and beef bouillon granules. Mix well to coat all the hash browns. Use a round casserole dish and spread the potato mixture on the bottom and up the sides of the casserole dish. “Like a nest.” Bake in the oven at 350* for 25 to 30 minutes.
  2. While the hash browns are cooking cook the sausage on your stove top and be sure to drain well. “If you like, add onions and a little green pepper.” Set meat aside after cooking.
  3. In a mixing bowl, combine the cottage cheese, eggs, and the shredded cheese. Fold in the meat. Pour this mixture into the hash brown nest and bake an additional 40 to 50 minutes until golden brown or until a knife inserted comes out clean. Let stand about 5 to 10 minutes before serving.
  4. This is also great for a brunch. I sometimes put a few dashes of hot sauce into the hash brown mixture when you are mixing it with the margarine and beef bouillon granules.
