Mexican Green Papaya Salad


"Green papaya is usually found in Asian, Vietnamese, and Thai salads and dishes. I've taken the crisp crunchiness of green papaya and given it a mexican/tex-mex twist! My kids love it when I use a bit less cilantro and chili powder."

  1. For dressing, blend garlic, cilantro, lime juice, brown sugar, olive oil, chili powder, and salt in a blender or with an immersion blender until smooth.
  2. Shred green papaya "meat" using a grater or an shredder attachment on a mixer. Place in large bowl.
  3. Toss green papaya with beans, corn, red pepper, and dressing.
  4. Let sit in fridge for about 30 minutes to blend the flavours. Season with additional salt and/or chili powder if necessary.
