Cube chicken breast. Heat olive oil in skillet and add minced onion and bacon, cooking until onion is translucent. Add chicken, garlic powder, salt and pepper and stir until chicken is cooked through.
Put sun dried tomatoes in saute pan large enough to hold spinach. Add pesto. Heat until oil is melted. Add spinach and cook, stirring constantly, until spinach is wilted and mixed with tomatoes and pesto. Set aside
In saucepan, mix marscarpone cheese, garlic, mustard, lemon juice, milk, salt and pepper. Heat, stirring constantly, until smooth and bubbly. Add parmesan cheese and stir until melted
Add sauce to chicken mixture and keep on low heat. Cook and drain pasta. Add to chicken and sauce. If needed, reheat spinach mixture to desired temperature. Dish pasta and serve with spinach on top. Sprinkle with parmesan cheese and enjoy!
