  1. 1.chop 1/2 cup red onion 2. chop1/4 cup cilantro. 3.chop one med tomatoe. 4.chop one alvacado. put everything in a large bowl a little pepper to taste. then add a half a bag of porkrinds cut with hand about 1/2 inch pieces.then mix about 1/2 to 3/4 cup of mayo.(you dont want it to mushy or to dry with the mayo) mix everything. heat up your tortillas, put mixture in the tortilla, add a little hot sauce(optional) then roll and enjoy.once you make the mixture eat within 20 min. dont let the rinds get soggy. they are deelish and easy.
