  1. Preheat oven to 375 degrees F, and grease a 12 cup muffin pan.
  2. In a large bowl, mix the flour, baking powder, soda, cinnamon, nutmeg, and the salt together.
  3. In a small bowl, beat the melted butter and sugar together, add the vanilla after, and mix well. Stir in the apples.
  4. After both the "wet" and the "dry" bowl are all ready, gradually stir the wet, into the dry and combine well.
  5. Spoon the mixture into each muffin cup in the pan.
  6. *Optional* Cut the strawberries into thin slices, and place them on each raw muffin mix that are already in the muffin cups. Sprinkle icing sugar over the strawberries and pop them in the oven for 20 mins.
  7. After baking in the oven for 20 mins, insert a toothpick through the middle, and check for any residue on the toothpick.if there is residue, bake for couple of minutes, checking regularly. Let the muffins cool in the pan for 5 mins, and take them out to cool further, onto a wire rack.
