Vegan Mexican Corn Chowder

"I had been trying out a lot of vegan recipes and my boyfriend and I both agreed that this was by far the best and most simple of everything we tried! The nutritional yeast really adds a "creaminess" to the soup and all the different chunky textures and flavors of the spices are amazing. I would definitely recommend adding the garnishes (cilantro and tortilla chips for sure!)"

  1. -Line a large pot with a thin layer of water and bring to a boil
  2. -Add onion and garlic and saute until onion is translucent (about 2 mins)
  3. -Add bell pepper and spices and reduce heat to medium, continuing to cook
  4. -Whisk nutritional yeast, milk and ketchup and pour over bell pepper mixture combining ingredients
  5. -In pot, add miso, corn and black beans. Stir in and cook until full hot. Squeeze in juice of lime
  6. -Add optional ingredients when serving
