BBQ Sauerkraut Casserole

"I searched for this old-time Pennsylvania Dutch favorite and was surprised to see that it wasn't on Allrecipes. At home, we never sat down to a holiday dinner without it. It's a good accompaniment to any oven roasted meat as it can cook along side the main dish in the oven, but it really shines with baked pork and ham. The tangy, sweet, bacon flavored sauce bakes down to caramelized perfection while the meat roasts."

  1. 1. In a large skillet, sauté the bacon & onion until onion is softened.
  2. 2. Stir in tomatoes and brown sugar until well incorporated, then stir in sauerkraut. Simmer 15 minutes on low to reduce liquids.
  3. 3. Pour mixture into a 2 quart baking dish.
  4. 4. Bake uncovered at 350 degrees for 2 hours.
