Marilyn's Stew and Dumplings

  1. In a small mixing bowl, add salt and pepper to flour.
  2. Toss stewing beef into bowl to coat with seasoned flour.
  3. In a small frying pan, warm up vegetable oil to medium hot.
  4. Sear coated beef till just brown on the outside.
  5. Remove beef from frying pan and place into a large roasting pan or large crock pot.
  6. Add canned tomatoes and mushrooms.
  7. Add bay leaves and sliced raw vegetables.
  8. Add water and/or beef broth till beef and vegetables are just covered.
  9. Cover roast pan or crock pot.
  10. Bake at 325 degrees F. or low heated crock pot for 5 to 8 hours.
  11. 1/2 hour prior to serving; mix 1/2 cup flour with enough cold water to make a watery paste.
  12. Slowly stir several spoonfuls of hot stew into flour paste.
  13. When the paste is warmed add it to stew as thickener.
  14. Repeat thickening process if a thicker stew is desired.
  15. Continue cooking
  16. If desired, stir together dumpling ingredients.
  17. Drop by tablespoonful over hot stew.
  18. Cover pot and cook an additional 15 minutes.
  19. Remove and discard bay leaves.
  20. Serve hot.
