  1. Cover peas with 2 qts cold water, simmer 2 minutes,
  2. Cover and let stand 1 hr.
  3. Add bone, onion, 1 tsp salt, 1/2 tsp pepper & Marjoram
  4. Bring to boil, cover& reduce heat
  5. Simmer 1 1/2 hr.
  6. Remove bone, dice meat. Add veggies. Cook Uncovered 30-40 minutes
  7. TO CAN:
  8. Ladle hot soup into jars leaving 1" headspace. Pressure can pints 75 and qts 90 min. Ater canner pressure has returned to zero leave 2 more minutes before removing vent. Remove lid & wait 10 minutes before removing jars.
