"Last night I was frantically searching for a non-coconut recipe for Irish Potatoes for St. Patrick's day (today). I recently became allergic to coconut, so I made this recipe up after not being able to find an alternative online or in any cookbooks I have at home. I think the almonds are a nice twist and help maintain the consistency of the ball instead of just omitting coconut from other recipes I've seen."

  1. This is an easy no bake recipe for Irish Potatoes without coconut.
  2. Set up: Grind 2 cups whole almonds in blender or food processor and set aside. Pour all of the cinnamon into a plate and set aside.
  3. In a separate bowl, mix butter, cream cheese and vanilla extract until evenly blended. Place entire bowl of butter mixture into the pan of ice to help the mixture stiffen. Make sure not to pour the mixture out of the bowl.
  4. Stir in sifted confectioner sugar and ground almonds until uniform. Let mixture rest on ice five minutes.
  5. Drop 1/2 inch balls onto cinnamon plate and roll until coated.
  6. Refrigerate for 20 minutes to set.
