  1. Heat all ingredients to a boil, then lower to medium simmer. Cover and stir as needed to prevent sticking. After about 10 minutes lower to simmer and cook until vegetables are thoroughly cooked, about 30-40 minutes. You might have to adjust water level to your liking and stir, stir, stir! When finished, serve in your favorite bowl with a little parsley garnish. Enjoy!
