Saute chopped onions and bell pepper and optional fresh chopped carrots in oil until slightly browned. (set aside).
Brown rice in oil about 3-5 min, pour heated chicken broth and salsa. Bring to boil. Cover and turn down to lowest heat and simmer approx 15 min or until all liquid is absorbed into rice. Add onion, bell pepper, peas and optional corn and carrots. Let rice rest for 5 minutes and serve.
