  1. 1. Cook rice and orzo; chop veggies into small pieces; finely chop parsley and cilantro.
  2. 2. Mix cooked rice, pasta, corn, peppers, onions, tomatoes in large serving bowl.
  3. 3. Combine the olive oil, lime juice, and herbs/spices in a jar and shake well until combined.
  4. 4. Toss dressing with the warm salad.
  5. 5. Chill salad (at least 2 hours) and serve. Can be served chilled or room temperature.
