  1. In large pot, place drained black and light red kidney beans, undrained sweet corn, undrained rotel tomatoes and habenero peppers, undrained chicken, chicken broth, rice, cumin and taco seasoning. Bring to a boil. Once boiling, reduce to a simmer for 50 min. Allow to stand for 10-15 min on stove to absorb extra broth. Serve with a dollop of nuefchatel cheese(or substitute with lite sour cream)
