"Sometimes dubbed 'Lazy Man's Quiche' this is nothing lazy. There is a bit of cooking and removing from the pan til all the parts are crisped and cooked. But it is still a one pot meal."

  1. Cook the hash brown with some oil in a large skillet, until a little crispy (over mark 4 for about 20 minutes, stirring throughout.) Remove to a plate.
  2. Cook the bacon rashers slowly in the same skillet, with the apple, until just cooked then add the hash browns back in to crisp up a little.
  3. Top with the eggs, cooking til half way done (about 4 minutes.) Meanwhile heat the toaster oven to broil at 400 degrees.
  4. Add the cheese to the still uncooked top. Sprinkle with 1/4 teaspoon of salt.
  5. Place the skillet in the oven and STAY NEARBY. Cook til set (about 4 minutes more.)
  6. Remove and serve warm with ketchup.
