  1. Mix with fork until forms stiff ball. Cover counter with lots of flour. Roll out as thin as possible. Turn over several times and add more flour to the surface while rolling out so that the noodle mixture won’t stick to the counter. Let dry on one side for 30-45 minutes then turn over and let dry another 30-45 minutes. If it feels dry enough, roll up and then cut very thin noodles.
  2. Fluff up the noodles and let dry 1-2 hours, fluffing every so often.
  3. Put in boiling chicken stock and simmer at least 15 minutes stirring often.
  4. Enjoy and smile--remembering your precious Grandma Green.
