  1. Preheat oven to 350.
  2. I use my Kitchenaid to mash the bananas and then add the next 5 ingredients in order, mixing until well combined after each addition.
  3. In a separate bowl mix together salt, soda, and flours. Add to the banana mixture and stir until just combined.
  4. I prefer to cook as six extra large muffins. Cook these muffins for 25 minutes or until a toothpick inserted comes out clean. If you choose to cook in a loaf baking time is approximately on hour. One dozen regular sized muffins with cook in approximately 20 minutes.
  5. Allow muffins to cool on a rack at least 10 minutes prior turning them out of the pan.
