  1. Put beef ribs in 2 quarts salted water bring to a boil, remove meat and discard water . Place ribs in 1 quart of water back on stove at medium heat, add squash, carrots, bouillon cube, ginger,potatoes, peppercorns allow to simmer 45 minutes. Add bokchoy, lemon grass, fish sauce and simmer additional 15 min.
  2. Can serve with rice.
