  1. Set egg whites aside.
  2. Beat together in a large bowl the yogurt, egg yolk, oil, agave nectar, and milk.
  3. Combine dry ingredients in a separate bowl, then gradually add them to the wet ingredients.
  4. Using an electric mixer, beat the egg whites until soft peaks form.
  5. Gently fold the egg whites into the batter.
  6. Fry pancakes on a griddle or in a large frying pan over medium heat, flipping when large bubbles begin to form in the batter.
