Radicchio & Butter Lettuce Salad with blueberries & kale chips

"I came up with this salad trying to get as many veggies in at the end of a day as possible while adding some crunch and protein, because I had not had any all that day. So I ended up taking a bunch of things I liked and mix them up with my favorite dressing olive oil and vinegar with salt and pepper to taste. I think it turned out great! I liked it so much I ate the whole bowl full! I hope you'll try it and see what you think."

  1. Preheat oven to 350.Remove stems from kale and tear into bite size peaces. wash kale in a cold water bath to remove any dirt hidding in the leaves. Remove kale from water and dry with either salad spinner or simply shake it out as best you can and pat dry with paper towels.
  2. place kale on a cookie sheet and drizzle with olive oil then season with season salt to taste. Place kale in oven for about 10 - 15 min or until edges are browned. Remove from oven and place on paper towels to absorb any excess oil. Set asside
  3. While kale is baking put an egg into a pot of water and slowly bring to a hard boil. Let egg boil for about 5 minutes then remove from heat. Pan fry the bacon to a crisp. Not burnt, be careful to not forget the kale in the oven. Place cooked bacon on paper towels to drain off excess grease and set aside.
  4. Take lettuces and tear or chop into fairly bite size pieces. take a red onion and cut in half vertically. Then standing one onion half on end virtically thinly slice about 1/4 C of onion.
  5. Take an avacado cut it in half remove fruit from skin by taking a spoon and scooping it out starting at the edges and working under between the fruit and the skin. Cube the avacado.
  6. take about 1/8 C of oyster mushrooms and chop or slice generally.
  7. slice the 2 radishes. Take tomato cut the top where the stem was off then slice down the middle vertically. Slice the halves of the tomato.
  8. Take lettuces, onion, avacado, mushrooms, radishes, and the tomato and toss in a large mixing bowl. Crumble bacon, remove shell from egg and slice egg then add to salad, add blueberries and give the salad another quick toss. Add oil vinegar, toss again, then add salt and lemon pepper to taste. Lastly add kale chips
