"It's like Stuffed Peppers but I've not put the meat and rice into the peppers. I essentially cut up the ingredients and cook it all in a skillet and the microwave. Faster and easier. I use ground lamb rather than beef because I think it adds more flavor. Delish!"

  1. Cut vegetables to about same sizes and add to pre- heated pan and olive oil. Begin cooking vegetables and add the ground lamb. Chop the ground lamb with a wooden spoon as it cooks. Add the spices, herbs, and seasonings. After the lamb has cooked most of the way and the vegetables have softened add the full can of tomato sauce. Additionally, add 1/4 can of water used to rinse the can to the saute pan. Allow the contents of pan to simmer until all the vegetables are fully cooked and softened. Microwave the rice until your are satisfied with its level of tenderness, then spoon the mixture from the pan over the rice. Wah La! Peppers without stuffing them!
