  1. Pre-heat the oven to 300° F
  2. Butter and then line a sheet pan with parchment paper.
  3. Layer the oats, coconut and almonds on the sheet pan. Toast the mixture for about 10 mins.
  4. In a sauce pan, melt the butter and add the sucanat, salt, honey and vanilla extract. Remove from the burner as soon as the mixture comes to a light boil.
  5. In a large mixing bowl mix the cherries and the oat/coconut/almond mixture and pour in the butter/honey/sucanat/salt mixture and stir well.
  6. On the sheet pan with the parchment paper, evenly spread out the chocolate chips and then spoon the granola mixture on top of the chocolate chips, pressing down lightly with the spoon. Even out the sides and bake for 20 mins or until lightly browned.
  7. Let cool for at least 3 hours until before cutting into bars.
