southwest "ranch" dressing


"Lately I’ve been craving a nice creamy ranch. Hey, it happens, but rich dressings are out of the question. So I made my own. Cottage cheese gives it that ranch look while spices like cumin and cilantro give it a delicious southwest twist. Looks rich, but won’t derail your diet."

  1. In saucepan, heat cottage cheese on low.
  2. Add cumin, chili powder, black pepper
  3. Simmer for a few minutes to let the flavors meld.
  4. Take off heat and add chopped cilantro.
  5. Add a bit of milk and beat to make creamier.
  6. Let it cool and then put on whatever salad you'd like!
