  1. Pre-heat oven to 350 degrees F.
  2. In a medium bowl, mix together all dry ingredients. For ground oatmeal, pulse in a food processor or an electric vegetable chopper until coarsely ground. Set aside.
  3. In a large bowl, mix mashed bananas, egg, vanilla, oil and apple sauce together until blended.
  4. Add dry ingredient to wet mixture until dry ingredients have been incorporated. Do not over mix.
  5. Drop onto greased or parchment paper covered cookie sheets by spoonful and flatten slightly.
  6. Bake at 350 degrees F for 15 minutes or until golden brown at the bottom edge of the cookies.
