  1. Dissolve yeast and sugar in 1/4 c. warm water and proof.
  2. Combine flour and sugar in a large bowl.
  3. Add proofed yeast to the rest of the warm water, stir into flour mixture.
  4. Knead with dough hook for 12 minutes.
  5. Place in oiled bowl to rise until doubled.
  6. Punch down, form into ball. Dust bottom of cloche pan with cornmeal, place ball in center. Cover with cloche top and let rise until doubled.
  7. Preheat oven to 450 degrees. Slash top of dough with sharp knife, cover with lid, and cook for 15 minutes. Reduce temp to 400 degrees, cook for 30 minutes more.
  8. Remove top and cook for 10 minutes more.
  9. Let cool on wire rack, serve warm.
