"I came up with this delicious budget-friendly dish trying to use up what I had on hand. Since I did not have any spaghetti sauce to go with the pasta, I came up with this enchilada meat sauce instead. Everyone loved the result."
Prepare the pasta according to package directions and drain.
Meanwhile, in a large skillet over medium high heat brown the ground beef and sausage. Sprinkle the taco seasoning on top. Pour the enchilada sauce and diced tomatoes in the skillet and stir. Turn the heat to low and simmer for about 20 minutes.
Divide the pasta into 8 bowls and top with 1/8th of the meat sauce. Sprinkle 2 tablespoons of parmesan cheese on top.
