  1. Preheat oven to 375 deg. Prepare half sheet pan by placing cooling rack in pan then coat with cooking spray.
  2. Wash and pat dry chicken. Set aside.
  3. Combine dry ingredients together. Coat chicken evenly with plain Greek yogurt. Roll chicken in dry ingredient mixture and place on prepared half sheet pan.
  4. Bake at 375 for 35 to 45 minutes turning once half way through cooking time.
  5. Serve sprinkled with fresh chopped parsley and wedges of lemon on the side (optional).
