No-bake Cheesecake


"I do not recall where I got this recipe. I know the first time I made it was for a pot luck at my job about 20 years ago. Some people that do not like cheesecake love this and other cheesecake purist ,like my wife, don't care for it. I love it!! Several people have requested the recipe and some have even asked me to make some for their wedding."

Original recipe yields 8 servings

  1. Beat the cream cheese until soft. Add 1/4 cup sugar and blend well until sugar is disolved. Next add 1 tsp. vanilla and blend well. Finally add 8 oz. sour cream and mix completely.
  2. Put away the mixer and grab a spatula. Add the cool whip to the cream cheese mixture and fold. DO NOT MIX or the end product will not be fluffy. Continue to fold until the color and consistency is the same throughtout.
  3. Place the mixture in the crust and smooth out. Chill for at least 3 hours but best if overnight.
