  1. Cook pasta. If using chicken, grill separately with desired seasoning (recommend Zatarains Garlic and Herb)
  2. In a large skillet, melt the butter over medium heat. Add the onions and sauté until translucent.
  3. Add garlic and mushrooms. Cover and sauté until mushrooms are tender.
  4. If a lot of juice from the mushrooms cooking down, remove cover and reduce liquid by half. While reducing, add seasoning: Italian seasoning, cayenne pepper, salt and pepper.
  5. Add wine and lemon juice. Stir and cook another minute.
  6. Add cream and simmer about 5-10 minutes until thickened.
  7. If using shrimp, add and cook another 3-5 minutes until shrimp are pink.
  8. If using grilled chicken, add.
  9. Add shredded cheese. Stir in spinach and cook another 1 minute until spinach is wilted.
  10. Pour over pasta.
