  1. Chop vegetables.
  2. Put a large stock pot on the stove and turn heat on medium. Add olive oil and vegetables (including garlic) and let them saute for about 5 minutes.
  3. Add 2 cups of vegetable broth and bring to a boil.
  4. Pour all ingredients into a blender and puree for about 1 minute.
  5. Sprinkle shredded cheese on top (optional)
  6. Serve and enjoy!
