  1. in a large skillet, brown sausage over medium heat (about 10mins). remove from pan and set aside on cutting board to cool.
  2. add vegetable oil to skillet & heat over high heat, then add chicken and brown evenly on both sides (approx. 10mins on each side). while chicken is cooking, slice sausages into rounds. remove chicken from pan and set aside to cool.
  3. reduce heat to low. make a roux by whisking flour and butter into the hot oil in the pan. continue cooking, stirring every few minutes for about 45-65 minutes (this step is essential!) until it reaches a dark reddish brown color. to help save time, when not stirring, dice the chicken into bite sized pieces.
  4. Once roux is ready, quickly add sausage, chicken, garlic, parsley and vegetables. Cook over low heat about 10 mins, or until vegetables are wilted. Transfer contents into 6qt stockpot then stir in tomato paste & spices. slowly add in broth while stirring to dissolve tomato paste. bring to a boil & simmer for about 30-45 mins. add shrimp to gumbo for the last 5 mins. of cooking then remove from heat. remove & discard bay leaves before serving gumbo.
