"Going GF isn't for the faint of heart. Soft breads, with crispy crusts are elusive, the foods that others make quick and easy take major planning. And then the taste and texture are severely lacking. Pizza is my downfall. Pizza with a crisp crunchy crust that showcased the flavors. Oh how iI've missed it! Then one day the craving was driving me insane. I started looking around the kitchen to see what I could use for a crust.I spied my pack of rice paper and the plan began to unfold. It turned out perfect. Its back, that crispy glorious treat is back!"

  1. Preheat oven to 450ºF.
  2. Take one sheet of rice paper and mist it very lightly with non-stick cooking spray.
  3. Top with 2 tbp of parmesan cheese and about 1 tbsp of mozzarella. You only want enough to give the paper body.
  4. Toast in the oven until cheese is just melted.
  5. Remove from oven and add a pinch of seasoning and garlic over the cheese. Top with the other piece of rice paper, lightly sprayed.
  6. Replace in the oven with the newest rice paper towards the bottom until lightly browned. Remove from oven and add tomato paste with a pastry brush. Top with the rest of seasonings and garlic. Add the remaining cheese and top with your favorite toppings. The crust is very thin so don't overload it too much or it won't old up.
  7. Replace in oven and bake until ceese is melted. About 5-8min.
  8. Slice and enjoy!!
