Beat sugar and margarine or butter together in large bowl. Sift flour, baking powder and salt over the butter/sugar mixture.
Add the unbeaten eggs, vanilla and half a cup of the milk. Beat at low speed for about 1min.
Add the remainder of the milk and beat for 2min more. Set aside.
Grease 2 deep pie dishes, peel, core and slice apples and split evenly between the two pie pans. Sprinkle with sugar (I tend to use much less than ½ cup) and generously dust with cinnamon (or omit if not desired, tastes also good without). Pour the dough mixture over the apples, spreading it out until they are covered. Bake at 350C for 45min, until top is nicely browned. Serve warm with Ice Cream and/or Whipped Cream.
