Mix together into crumb like mixture. Press 1/2 of mixture into bottom of a spring form pan. Bake at 425 for 10 minutes. Remove and press other 1/2 of mixture onto sides of pan. Set aside.
Cream sugar and cream cheese until smooth. Add eggs and yolks. Mix until creamy, add vanilla and heavy cream. Mix until smooth ( filling will be thick). Pour filling unto crust and bake for 10 minutes at 425 then lower temperature to 300 degrees and bake for 1 hour and 15 minutes, or until top cracks.
Chocolate Caramel: pour 1/4 filling into crust and add caramel and 1/2 bag dark choclate chips. Pour remaining filling over this.
You can make the cheesecake plain or add a can of your favorite fruit pie filling on top. This is a basic recipe. Have fun adding your own variations to it.
