  1. In a large bowl mix flour, baking powder and brown sugar. Ensure brown sugar is mixed well, no lumps. A flour sifter can be used.
  2. Stir in butter, egg yolk, milk, irish cream and vanilla until incorporated.
  3. Whisk egg white, fold into batter gently.
  4. Let rest for 5 minutes, as waffle iron is heating.
  5. Spray waffle iron with cooking spray, drop 1/4 c batter for each waffle, cook for 5 minutes, or until golden brown.
  6. Serve with home-made syrup, or top with whipped cream and strawberries.
