  1. DRESSING: Combine pineapple juice, vinegar, lime juice, sugar and cumin in a small bowl.
  2. Slowly whisk in oil, beating constantly until combined, then whisk in hot water.
  3. Stir in cilantro, remove 2 T. and reserve.
  4. Cover remaining dressing and refrigerate.
  5. CHICKEN: Preheat; season chicken with salt and pepper, then cook 4-5 minutes per side, basting with reserved dressing.
  6. Cut into bite-sized pieces and chill well.
  7. SALAD: Place 1 c. of lettuce in four bowls. Top with equal amounts of chicken, pineapple, red pepper, avocado and onion.
  8. Drizzle with chilled dressing.
