  1. In a strainer press crab to remove excess moisture.
  2. In food processor or by hand, rough chop celery, pepper & onion.
  3. In a sauté pan, heat all chopped vegetables on medium heat with cajun spice, garlic & hot sauce. Cool immediately.
  4. In a large bowl, combine cooked vegetables, crab, breadcrumbs, mayo, egg, lemon juice and seasoning. Mix until thoroughly incorporated.
  5. Portion crabcakes using ¼ cup measuring cup onto a tray wrap & refrigerate.
  6. To cook, preheat oven to 400 F place crab cakes on sheet pan and place on middle rack in the oven for 15-20 minutes until golden brown on the outside.
