  1. In a large pot, boil the carrots until soft. Discard the water since it will be bitter.
  2. Add all the Ingredients except the cilantro.
  3. Bring to a boil, reduce heat and simmer for for 45 minutes
  4. Purée the soup In blender or immersion stick
  5. Add the cilantro, purée then taste add salt and pepper as needed.
