  1. Preheat oven to 350 degrees.
  2. 1. Place chicken in baking dish, drizzle with olive oil. Bake for 20 minutes or until cooked through. Cool and cut into strips or cubes (whichever you prefer).
  3. 2. While chicken is cooking, prepare rice according to package directions.
  4. 3. Saute onion, garlic, pepper, and carrots in olive oil in skillet over medium heat for 10 minutes or until tender.
  5. 4. Combine rice, vegetable mixture, chicken, beans tomatoes, and 1 and 1.5 cups cheese in a large bowl.
  6. 5. Spoon into a large greased baking dish and sprinkle with remaining cheese.
  7. 6. Cover with foil and bake for 30 minutes.
  8. 7. Bake, uncovered, for an additional 10 minutes.
