Puffy Pancake with Banana-Berry Compote

  1. 1) Pre-heat oven to 425 degrees F.
  2. 2) Prepare pancake: Place 10-inch skillet with oven safe handle in oven; heat until very hot. In blender at medium speed, blend eggs, milk, flout, sugar and salt until smooth.
  3. 3) Remove skillet from oven; add margarine and swirl until melted. Pour batter into hot skillet; Bake 15 minutes or until puffy golden.
  4. 4)Meanwhile, prepare compote; In bowl, toss bananas and berries with sugar and lemon juice.
  5. 5) Spoon compote onto pancake; sprinkle with confectioner sugar or a dollop of cool whip. Cut into wedges and serve immediately.
