  1. Preheat the oven to 350 degrees F. Grease or line muffins pans with liners.
  2. Combine the peaches, basil and 1 tbsp brown sugar in a bowl. Let sit for 15 minutes.
  3. Meanwhile, in a large bowl, sift together flour, baking powder, baking soda and salt. Mix in 1 cup of shredded cheese. Set aside.
  4. In a large bowl cream butter and remaining sugar with electric mixer. Add eggs, one at a time until just combined. Gently fold in peaches.
  5. Add flour mixture to wet ingredients, a little at a time, until just combined.
  6. Divide batter among muffin cups. Sprinkle the remaining 1/4 cup of cheese on top of muffins.
  7. Bake for 25 minutes or until a toothpick comes out clean.
