Red Cabbage Cole Slaw

"This is an awesome coleslaw that I make occasionally, because it is tart, crunchy and flavorful. Unlike traditional coleslaw, my recipe is not sweet at all and is sour, because of the acidity from the lemon juice and pickles. The crunchy vegetables and creamy dressing makes it refreshing as a side dish for a barbeque or a quick and easy salad to accompany a weekday dinner. Enjoy!"

  1. In a large bowl, shred half of a red cabbage, shred 2 carrots, slice very thinly 2 celery stalks, dice 1 small yellow onion, dice 1 medium size dill pickle, chop 7-8 sprigs of parsley.
  2. In a small bowl, mix 2 tablespoons mayonnaise, lemon juice freshly squeezed from half a lemon. teaspoon of salt, half a teaspoon black pepper and half a teaspoon of red pepper of your choice. I use Aleppo pepper, but you can use paprika too. whisk together and pour over the salad. Toss all together well and serve.
